In my class we have learned that soul food has been defined (from the Black Power movement of the 60’s) as the cuisine of black Americans from various backgrounds, and considering that you are a black American, this macaroni and cheese does count as such.On the other hand, this is the first “soul food” macaroni and cheese that uses a roux (with flour, milk and butter) as its base. I have been through dozens of proclaimed “soul food” macaroni and cheese recipes and not one of them has included flour.
